Earl of Thomond

Dromoland Castle’s flagship dining experience

We know. The Earl of Thomond Restaurant is as grand as can be, with those soaring ceilings and astonishing crystal chandeliers. This is a place where silver cloches and old-world service will always have a home. But beneath the gilded cornices and sweeping velvet drapes, this is a dining room where the imposing formality of a bygone era has graciously given way to smiling indulgence.

Of course, some guests still dress for dinner as they did in the days of the Earls and their Ladies—but now it’s for the sheer joy of fashion and a novel excuse to show it off. We promise we won’t bat an eyelash if you don’t wear a jacket. These days, the only thing we still take so very seriously is the quality of the exquisite ingredients we serve.

ingredients are the leading characters

Those ingredients are the leading characters here. They take centre stage in this theatre of ornate extravagance. Sourced as close to home as humanly possible, the produce that comes into the Castle kitchens has been hand-picked from the best of Ireland’s artisan suppliers.

With the assistance of a talented and focused brigade, Executive Head Chef David McCann conjures a culinary folktale for his guests. Familiar, comforting dishes, grounded in classical techniques, are transformed with deft, imaginative flourishes into memorable experiences. His menus, which evolve with the cycle of the seasons, illuminate flavours from the untamed landscapes of the Burren. The subtle shades of umami to be found in mountain-grazed meat and wild-caught game. The mellow earthiness of mushrooms foraged in a secret grove. The mineral tang of seaweed gathered from the rugged limestone coast. Every element tells a story.

So do many of the restaurant’s long-serving staff—if you’re lucky.

Just get Dennis started some fine evening. We dare you.
