With its grand Earl of Thomond fine dining restaurant, its extravagant afternoon tea, its golf clubhouse, and its Irish gastropub, Dromoland Castle offers guests the best of Irish cuisine created with fresh, local ingredients. Now, overseeing the entire food and beverage programme is Xavier Perche, who brings extensive hospitality experience to Clare’s famous five-star castle hotel.

Originally from Lyon, France, Xavier studied advertising and hotel management at Pace University in New York where he began his career before taking on the role of food and beverage manager at the Hotel Chalet Saint-Georges in Megève in the French Alps.

Xavier’s appointment follows closely after the launch of Dromoland Castle’s new foraging programme, where local expert, Oonagh O’Dwyer, brings guests down forgotten country lanes and along quiet beaches to find the best wild ingredients.
